PREPARATION AND PRESENTATION OF WINE
The rosé wine Château Castel des Maures is grown in a small vineyard located in Hyeres, a small Mediterranean town, on the slopes of the Valley Sauvebonne along the edge of the Maures forest.
The domain consists of 5.71 acres of vineyards of different grasps separated by a row of olive trees. The rosé Château Castel des Maures is an exceptional wine born of the special care provided in order obtain perfectly healthy and mature grapes and from the special care applied during the vinification process: this wine is made on small volumes with respect to all fermentation stages in order to extract maximum flavor from the grapes. Annual production is limited to 45 hectoliters per hectare to allow the vine to give a maximum concentration level of local contributions and maturity of grape bunches. The fruit of the vine is processed until January, then filtered in February, and bottled in March or April. The growing area is a part of AOP Côtes de Provence region, the largest Provence appellation. With a certain diversity of soils, the whole area is under typical Mediterranean climate typical of Provence. The rosé Château Castel des Maures wine is dry and fruity.
