PREPARATION AND PRESENTATION OF WINE
This rose wine is produced by Chateau Saint Jean, located in the heart of the plain bordered by the Maures and stretches from Hyeres-Toulon to Fréjus-St Raphael. The clay and limestone soil is covered by a surface detritus, colluvium slope in clay mix, from the slate of Maures mountains. The harvest takes place at maturity in the morning while it is cool. The vinification is done in a traditional manner and in workmanlike fashion. The Chateau Saint Jean vineyard is a part of AOP Côtes de Provence area, the largest Provence appellation. Its geographical area includes 85 municipalities of three Mediterranean departments: VAR, Bouches-du-Rhone and Alpes-Maritimes. With a certain diversity of soils, the whole area is under the influence of the typical Mediterranean climate of Provence. AOP Côtes de Provence vineyard covers about 20,000 hectares, and it provides a majority of rosé wines, produced mainly from Grenache, Cinsault, Carignan and Syrah. Chateau Saint Jean benefits from its unique location halfway between the northern part of the appellation, where the vineyards are considered to be the freshest, and the coastal area, known as particularly hot. This very favorable microclimate is ideal for rosé wine production, and AOP Côtes de Provence wines usually known as pleasant and powerful at the same time.
