PREPARATION AND PRESENTATION OF WINE
CHATEAU DEFFENDS wines are products of the AOP Côtes de Provence, the largest of the Provence appellations. Its geographic area covers 85 municipalities situated within three Mediterranean departments: VAR, Bouches-du-Rhone and Alpes-Maritimes. With a certain diversity of soils, the whole area is under the typical influence associated with the Mediterranean climate of Provence. The vineyard of AOP Côtes de Provence covers about 20,000 hectares. CHATEAU DEFFENDS wines are produced at the 30ha vineyard managed by the owner, Mr. Verges, who has been a winemaker and the vineyards' sole proprietor since 1999. This vineyard is located in the so called “golden triangle”: Pierrefeu-du-Var - Carnoules - Cuers. The soils throughout the surrounding area are mainly made up of clay and limestone. For the production of rosé wines, the grape composition consists of Grenache and Cinsault. Such wines are prepared by racking and fermentation at controlled temperatures. Wines from this vineyard are produced following specifications established by the Vins Breban company, exclusive agent for their marketing and distribution worldwide.
