PREPARATION AND PRESENTATION OF WINE
The rosé wine Domaine Fazi is produced from the Sciaccarellu grape varietal. Its name is derived from an adjective in the local dialect meaning “cute" for a varietal grown only on the island of Corsica. Originated in the Island of Beauty, a typical Mediterranean island, rosé wine Domaine Fazi belongs to the group of wines classified as appellation Corsica. The domain was created by Mr Vincent Fazi in the early 1970s. Situated on the east coast of the island, between Aleria and Ghisonaccia, the Fazi vineyards surround the hamlet of Saint-Antoine near Ghisonaccia. Its vineyards benefit from plenty of sunshine throughout the year and local temperatures in and around the vineyards are moderated by their proximity the sea and mountains. At the Fazi vineyard, each grape varietal is vinified separately, treated through a technique of cold liquid stabilization, and then subjected to temperature-controlled fermentation and standard aging processes. This exceptional grape growing area enables traditional Corsican varietal Sciaccarellu to express its outstanding aromas, originality, and quality.
