Alliance food – wine:
The Provencal wine MIMI EN PROVENCE nicely compliments Niçoise Salad.
Preparation: 30 minutes
For 2 servings: 4 tomatoes * 2 green peppers * fresh onions * 6 radishes * 2 small fresh artichokes (optional) * 100 g prawns (optional) * 6 anchovy fillets * 2 eggs * 1 handful of small black olives * 1 clove of garlic * 1 mixed leaves salad * 3 leaves of basil * olive oil * salt and pepper
Rub the inside of the plates with the peeled garlic clove. Cut tomatoes and radishes into thin slices. Remove the first skin and cut the white and green parts of the fresh onions. Dice the hearts of the artichokes. Clean peppers, then cut into thin slices. Boil the eggs, peel them. Cut the anchovy fillets into halves.
Serve plates with tomatoes, green peppers, fresh onions and salad leaves, add fresh beans, radish slices, black small olives, hard boiled eggs and anchovies.
Prepare the sauce in a bowl by mixing 3 tablespoons of olive oil, chopped basil, salt and pepper.
