Sparkling wine "JACQUES PELVAS" rosé brut delightfully compliments a dessert dish like apricot tart.
Preparation - 10 minutes. Cooking time - 35 minutes.
For 6 servings: 1 puff pastry * 1 kg of apricot * apricot marmalade * 1 liter of milk * 100 g of flour * 200 g of sugar * 4 egg yolks * vanilla
Bake the pastry in the oven at 220°C for about 15 minutes.
To prepare the cream, whisk egg yolks with the sugar until the mixture thickens. Add 100 g of flour and about ½ cup of whole milk.
Heat a ½ cup of milk. After 3-4 minutes, combine egg yolks, sugar, flour and milk. When finished, add a touch of vanilla flavoring, then mix briskly with a whisk while bringing the mixture back to a brief boil.
Slice fresh apricots in half sections. Garnish warm dough with cream and apricots. Coat with apricot marmalade and caramelize for a few minutes in oven at high temperature.
