OMELET WITH POTATOES AND GREEN SALAD

The rosé wine DOMAINE DE LIBRAN nicely compliments potato omlettes.
Preparation - 10 minutes. Cooking time - 25 minutes.
For 2 servings: 3 potatoes * 1 onion or 1 shallot * 3 tablespoons of olive oil * 2 eggs * parsley * salad leaves * salt and pepper
Peel the onion and dice into very small cubes. Peel the potatoes, cut them into very thin slices and cook about 10 minutes.
Meanwhile, brown the onion in a separate pan for about 5 minutes.
In a bowl, beat the eggs, then add salt and pepper to taste. Pour the mixture into a form by adding the prepared potatoes and cooked onion. Bake about 10 minutes.
Wash and drain the salad leaves. Slice the omelet into portions and place them on plates accompanied with fresh green salad.
