SWORDFISH WITH LEMON

Rosé wine AOP Aix-en-Provence "Domaine de Paris" goes well with swordfish bathed with the juice of fresh lemons.
Preparation - 30 min, Cooking - 15 min. For 2 persons: 2 swordfish steaks weighing approximately 150 g each * 1 clove of garlic * 4 whole lemons * 1 red bell pepper * 2 tablespoon (tbsp) of olive or sunflower oil * 10 g butter * rice or pasta * salt to taste * For decoration: tomatoes,parsley, salad leaves, carrot, rice or pasta
Peel and cut garlic into thin slices. Squeeze the lemons and collect the juice. Place swordfish steaks in a suitable dish. Pour a mixture of 12 tablespoons of lemon juice, diluted by 12 tablespoons water, over steaks and add red pepper and salt to taste. Marinate for approximately 30 minutes.
Carefully remove the fish from the marinade. Place steaks in a lightly oiled pan. When hot, add the butter, and gently place the swordfish steaks in the pan. Cook 3 to 4 minutes on each side. Keep the steaks warm in a covered dish until ready to serve. Garnish fishes with fresh lemon slices, tomatoes,parsley, salad leaves, and freshly chopped carrots. This dish can be served with a white boiled rice or with a fresh pasta.
