Alliance Food - Wine:

Pie with tomato and basil goes well with  "Domaine de Pontfract"  rosé wines.

Preparation - 15 minutes, cooking time - 2 hours 15 minutes. For four (4) servings: 250 g puff pastry, 8 Roma tomatoes, 2 garlic cloves, olive oil, 2 tbsp of pesto, 6 lettuce leaves, 2 tbsp balsamic syrup, grain of salt, ground pepper.

Clean the tomatoes, remove skin, cut in half, remove seeds, place them on a non-stick plate, cover with cloves sliced garlic, drizzle with olive oil, season to taste and bake, in warmed up to 100°C oven for 2 h. Roll out the pie pastry, cut out circles of 8 cm in diameter, place on a non-stick sheet and bake, in warmed up to 180°C oven, for 15 min. Just before serving, brush each pastry with pesto, spread the tomato confit and bake pies to warm. Serve with a drizzle of balsamic syrup and decorated with lettuce leaves.
