Alliance food - wine:

Rosé wine  «CHÂTEAU CASTEL DES MAURES»  nicely compliments a Grilled Salmon marinated with coriander.

Preparation - 30 min. Cooking - 45 min. For two (2) servings: 2 salmon fillets of 150-200g each * 1 small red pepper (optional) * 4 tbsp sunflower or olive oil * 1 tbsp chopped fresh coriander * 3 endives * 200g of spinach * 200g grilled almonds * salt * ground pepper *

Prepare the salmon: Rancez fish under the water, remove the skin and bones.

To prepare the marinade, peel the peppers, remove seeds and cut the the peppers into thin strips. Put the salmon pieces in a dish and pour over the fish 2 tbsp olive or sunflower oil, add the half of coriander, chilli and ground pepper diluted in 50 ml of water. Let marinate for 30 minutes.

Meanwhile wash and cut endives into rounds. Wash spinach. Boil the endives for 3 min. Drain and let them cool.

Carefully dry off the fish. Heat oil in a pan and when hot, add the salmon and cook about 3 minutes on each side. When the fish is ready, serve with spinach, endive and grilled almonds.

In addition to or instead of vegetables, you can accompanying this dish with rice.
