Alliance Food - Wine:

Omelette Millefeuille of four parfums goes well with  "CHATEAU CASTEL DES MAURES"  rosé wine.

Preparation time - 10 minutes, cooking time - 35 minutes. For four (4) servings: 8 eggs, 2 tomatoes, 1cs olive oil, 1 teaspoon thyme, 2cs pesto, 2cs chopped black olives, 50g of bush (fresh cheese), salt “Flower”, ground pepper.

Cut tomatoes in half, place them in a skillet over high heat with olive oil and thyme, season and cook for 5 minutes on each side, then dice. Put them to refresh. Break the eggs and beat 2 by 2 into 4 bowls. Add cooled tomatoes in one of these bowls, the pesto - in another, black olives and the bush - in the two others, beating aside. Put a nonstick skillet, about 10 cm, on high heat, then bring content of each bowl and cook omlelettes for 3 minutes each side. Place them on each other in a plate. To be served cold cut like a pie.
